Vegan Peanut Butter Cookies

  • 1 cup peanut butter
  • 1 cup granulated sugar
  • ⅔ cup rice flour
  • 1 tsp baking powder
  • ¼ cup applesauce
  • 2 tsp vanilla
  • Pinch of salt

  • Combine ingredients in a large bowl and mix until the dough is smooth.
  • Place Tbsp-sized balls of dough on a cookie sheet.
  • Chill in the fridge for 1 hour.
  • Bake at 350 degrees for 10 minutes.
